Recipe: Sausage, Peppers & Onions on a Roll with Italian potato salad
Serves: 4
Ingredients:
2-3 tablespoons olive oil
3 peppers (your choice of color) seeded and thinly sliced
1 large onion thinly sliced
2 cloves garlic crushed
salt/pepper
1 package Neshama Spicy Italian Chicken & Turkey Sausages
Instructions:
Saute peppers and onions until they are softened, and onion begins to carmelize nicely. Add garlic toward the end of the cooking and saute briefly with pepper and onion mixture,
Grill or saute sausage until browned.
Toast rolls (baguettes) briefly. Pile on the sausage and peppers!
Italian Potato Salad
Ingredients:
1 1/2 lbs. small red or white potatoes (larger ones halved so pieces are of uniform size)
3 tablespoon capers
1 cup celery, finely chopped
1/2 red onion finely chopped
3-4 tablespoons extra virgin olive oil
2 tablespoons lemon juice
2 tablespoons red wine vinegar
salt and pepper to taste
Instructions:
Boil potatoes in a large pot of salted water until tender, appx. 10-15 minutes
Drain potatoes and return to the pot
Add capers, celery, onion and mix
Whisk together the lemon juice, vinegar and olive oil. Add to the potatoes. Season to taste with salt and pepper
Salad may be served warm or room temperature.
