Recipe:
Wild Thymes Plum Currant Ginger Chicken Salad
Serves 3-4
- 2 ½ lbs. Boneless/skinless chicken, poached and cut into medium cubes
- 1 cup Wild Thymes Plum Currant Ginger Chutney
- 6 tablespoons mayonnaise
- Romaine lettuce leaves
Combine the Wild Thymes Plum Currant Ginger Chutney and the mayonnaise and mix well. Add to the chicken pieces. Serve on dark pumpernickel with romaine lettuce or over a mesclun salad greens.
Chutney Chicken Salad
Serves 4
Ingredients:
2½ lbs. Boneless/skinless chicken (or turkey), poached and cut into medium cubes ½ cup fresh cilantro, finely chopped ½ cup cashew nut pieces 1 cup Plum Currant Ginger Chutney or Mango Papaya Chutney
6 tablespoons mayonnaise Salt & pepper to taste
DIRECTIONS:
Mix the chutney and the mayonnaise in a separate bowl and set aside. In another bowl combine the chicken and cashew pieces. Add the mayonnaise and chutney mixture and cilantro and toss well. Serve on crusty peasant bread, or on top of a green salad.
